The main event is certainly the feast dedicated to the Patron Saint Nicola, on December 6 th . In fact, for the people of the town , the celebrations in honour of the Saint represent the most important time of the year, not only from a religious point of view, but also from a social one. The Statue of the Saint is carried in a solemn procession by a numerous group of strong men and it goes along the streets of the town while the cheering crowd lines the path of the Saint and the waving members of the congregation many of whom are bare-footed, follow the procession. The procession starts from the Chiesa Madre, and in accordance with a ceremony which has been repeated from many centuries now, it moves along a precise itinerary, a sort of track that in the past allowed the different social representatives of the population to pay homage to the Saint, but also to show themselves in front of the town. Some days before the feast, the statue of the Saint is moved from the Sacristy, where it is all year long, into the Church. Here it is exhibited to the worshippers for the traditional novena. After the procession, the Saint, moving backwards not to turn his back on the worshippers, is taken back to the Sacristy. The devotion for Saint Nicola finds its origin in the Middle Ages and is linked to a valuable picture representing the Saint, which is now exhibited on the main altar of the Chiesa Madre and which was once used for the solemn procession of December, 6 th .
The origin of the picture is mysterious. According to an old tradition, it arrived in Roccavaldina from Palermo . It had been miraculously saved from the remains of Casa Professa, destroyed by a terrible fire. In the following years, the devotion rooted more and more in Roccavaldina as well as in the nearby villages, also thanks to the numerous miracles made by the Saint. On those days there was a terrible famine due to a very long drought which caused the death of hundreds of people. In such a difficult situation the inhabitants of Roccavaldina prayed the Saint so that he could put on end to the scourge: the picture with the image of the Saint was carried in procession and the Saint was invoked many a time. The tradition say that the people's invocation did not remain unheard.

During the procession, a sailing-ship appeared off the coast of the town. It had been sent by an unknown Asian prince and carried rice in such a quantity as to feed the whole population. The deed was interpreted as a miracle from Saint Nicola. Since then that extraordinary event has been celebrated with solemn ceremonies in honour of the Saint,, elected the patron of the town. However, as it often happened, the holy event mixed to the profane. In fact, in order to thank the Saint, the population sacrificed a fat veal, according to a pagan ritual, but before that, they carried it around the village.

The veal symbolized the evil and its death meant the victory of the good. With the meat from the sacrificed animal and the rice, a big banquet was arranged. There sat three representatives for each of the following social classes : the rich, the poor, the noblemen, the servants, the citizens of Roccavaldina and the strangers. The odd ceremony was called “ Convito” and it is still held today with the same enthusiasm and devotion as in the past. It is characterized by two processions. The first one starts from the Chiesa Madre with the statue of Saint Nicola followed by the worshippers. The second one starts from the place where the sacrifice was held and they both unite in a single procession that ends up in the square of the town where the “Convito” is consumed. Traces of a similar ceremony can be found on a Greek island.
